What more do I need to know, but don't even know to ask?

A difficult question to answer, and it's intended to be the source of further FAQ in the future!

Just as an example - many young fencers are taken aback to learn that pool fights, and early DE fights in Opens may not have independent referees - the fencers are expected to referee themselves (ie a fencer from the same pool, or in the same part of the DE draw will ref). This is considered normal by adult competitors, but can take youngsters aback. Normally, young fencers in their first Open are not expected to ref, but pretty soon their turn will come. It's a skill worth acquiring!
